Do I need to change trains between Shin-Osaka and Odawara, and at which station?

No, it is not mandatory to change trains. Hikari and Kodama Shinkansen trains serve Odawara directly from Shin-Osaka in approximately 2 hours and 30 minutes to 2 hours and 45 minutes. If you prefer a Nozomi Shinkansen, a transfer will be necessary at Nagoya or Shin-Yokohama.

Does the Nozomi stop at Odawara?

No. Odawara is served by every Kodama and by a few Hikari. From Shin-Osaka, take a direct Hikari when one is available, or a Nozomi to Shin-Yokohama and then a Kodama: the Nozomi does not stop at Atami either.
