Expertly prepared, topped with whatever you want - in fact the term okonomiyaki literally means "whatever you want" this kind of Japanese pancake is adapted to your every desire and is cooked right in front of you by a cheerful team that know their job like the back of their hand or should we say spatula! Okonomiyaki are indeed cut with a sort of metal scraper.
Cheese, different kinds of fish, shrimp, squid... the secret of the restaurant is to find the right balance between the filling and the egg mixture, and to top it all with a slightly sweet, brown sauce, dried bonito shavings (katsuobushi), grated algae (aonori) and mayonnaise. The Osaka okonomiyaki use yams in the egg preparation and garnish them with seafood such as octopus or squid.
